Spring Chicken

You know when you come home from work and there’s something waiting for you that you can’t wait to EAT?!  The something that is that good that you even speed a little to get home just so you can get your hands on it.   Maybe it’s just me.  Yeah, it probably is.  This is that good.

My sister is visiting for a few days and my husband sends me a text at about 2:45 pm saying, “Becky is making chicken salad!”  So of course it’s all I thought about the rest of the day.  It’s that good.  I swear it’s addicting.

So here is the recipe, which is originally my mom’s.  She can cook.  I mean cook!  We do our best to match her recipes, but the thing is, nobody in my family ever measures anything!  So it’s a tad bit difficult to mimic her masterpieces, but Becky nailed it with this one.

Here’s the recipe:

1/3 of a medium white onion, chopped
1/2 cup chopped pecans
1.5 cups of red seedless grapes, cut in half (can do more or less depending on how sweet you want it)
2 oz Craisins
2 lbs of boneless chicken breasts, poached, then shredded
1.75 cups of mayonaise (can use light mayo for less calories)
1/3 tsp salt (can add more to taste)
1/2 tsp of pepper (add more as needed!)

Mix everything together and refrigerate for a couple hours.  Serve with bread or crackers.

It’s killer, I promise.  We have this chicken salad at almost all our family gatherings.  Mom, thanks for the recipe and thanks to my sis for making it!  :)

    This recipe is incredibly delicious but the amount of salt & pepper can’t possibly be correct. I used about 1/4-1/3 tsp of salt & the same amount of pepper. Just thought I’d share to prevent someone from actually using 2T salt & 1T pepper.

So we shall celebrate our first foodie posts together!!…I love chicken salad and this looks like a great one…I try to make some type of chicken salad when I am having the ladies over for lunch..One day, I had to BRING chicken salad to a function…I was so busy the day before,so I completely did not have a lot of time to make one up at the last minute…SO, I thought of Sandra Lee…you know, the semi-homemade lady…so I went to the grocery store, bought the typical ingredients for the salad, WITH ONE EXCEPTION…I bought the already made rotisserie chicken from the grocery store and came home and pulled and chopped the chicken…added the fix ins’ and Wha-la…instant chicken salad!!

    Needless to say, it was more of a hit than my usual salad that takes more time to prepare!

    Go figure!!….I am definitely trying your mom’s recipe…Sounds wonderfully delicious!!

    I’ve only had chicken salad twice in my life. The 1st time it was delicious and the 2nd time it was god awful. Maybe I’ll give it a shot another time.

    And i get excited about food sometimes too. Especially if there’s cake involved :)
